Doves and pigeons are the same thing; it is a purely semantic difference.

There are many species of doves and pigeons. The pigeons most people talk about are the Rock Dove (Columba livia). Real white doves are a mutation of the Ringneck Dove (Streptopelia risoria). However the white "doves" in wedding releases are homing pigeons- Rock Doves (Columba livia) again. Just white. Real doves don't have a strong homing instinct and would really be a one use release.
While they are technically the same thing, "Dove" in English (at least here in the States) is usually in reference to the pure white bird (typically viewed in a positive light- (weddings, peace,innocence, etc) while "Pigeon" is thought of as the more common gray bird found in cities and viewed as a nuisance and pest ("rats with wings" etc).
Correct. Additionally, "releasing a pigeon" also means "to fart" in Hungary
