Neat trick, but still a trick. The glass is placed in front of the "spinning water"(check the shadows), the "water" spins on the opposite direction to hand flick (ooops. . .) and his finger does not touch the "water" when he breaks the effect at the end. Nice video editing, though ;)

Could you do this by freezing the cup while the water’s in it? (Say, by dipping it in liquid nitrogen?) You could get a shell of ice with frozen water inside… Maybe?
